Ingredients

  • 1½ pounds boneless skinless chicken thighs
  • 1 large red onion
  • 450g or 3 large bell peppers (1 red, 1 yellow, & 1 orange)
  • 100g or 1 large poblano
  • 2½ teaspoons salt
  • 1 teaspoon black pepper
  • 2 teaspoons garlic powder
  • 3 teaspoons onion powder
  • 3½ teaspoons ground cumin
  • 3½ teaspoons chili powder
  • 1 teaspoon red pepper flakes
  • ½ teaspoon dried oregano
  • Juice of 1 lime
  • 2 tablespoons olive oil

Sheet Pan Fajitas 🫑

Instructions

  1. Preheat your oven with the sheet pan inside @ 500°
  2. Chop 🔪

  3. Cut chicken, onion, bell peppers & poblano into ¼ - ½ inch strips and throw em all together in a big bowl.
  4. Mix 🥣

  5. Add salt, pepper, spices, lime and olive oil into the bowl and toss to coat.
  6. Bake ♨️

  7. Take the sheet pan out of the oven, and as quickly as you can manage while still being safe, spread the meat & veggies onto a flat layer. Be careful as the oil will sizzle when it hits the pan. Return the sheet pan to the oven and cook for 15 minutes - tossing half way through.
  8. Char 🔥

  9. Pull the sheet pan out, and toss everything around again. Turn the broiler on, and return the sheet pan to the oven (under the broiler) and broil until you can see / smell some char - should take about 3 minutes. Repeat this process of tossing and charring until you reach desired char coverage on all sides.
